Chef Jack Wynne of 12 Moons at Snoqualmie Casino will be the featured guest chef at FareStart Restaurant on Thursday, August 30th. Jack Wynne's culinary career began in the Detroit area where he started as a dishwasher. His drive and hard work helped him climb the ranks and opened new opportunities. After honing his skill in casinos, Wynne discovered his passion for Japanese food and attended the Tokyo Sushi Academy in Shinjuku-ku Tokyo. Chef Jack Wynne brings 27 years of experience, fresh ideas and a strong sense of authenticity to his position as Chef de Cuisine at 12 Moons in Snoqualmie Casino. Jack Wynne's featured menu at FareStart Restaurant will include: Amuse Bouche: Edamame Soup. Young soy beans, red peppers, local Dungeness crab, shiso. For vegetarians substitute silken tofu for crab.   First Course: Nozawana Ohitashi. Washington turnip greens, smoked garlic ponzu, Washington Granny Smith apple, sesame oil. Entree: Albacore. Locally caught, maitake rice, dashi, daikon, local carrots, miso, local bing cherries, shichimi. Vegetarian: Yaki Onigiri. Crispy sushi rice, kabocha squash, yuzu, red pepper, maitake tempura, furikake Dessert: Cocoa Pork Belly Kushiyaki. Apple cider, soy, mochi, chocolate-avocado ice cream, lemon boy tomato flan, chicharrones.
